Fermentation is used in the production of various foods. Examples of foodstuffs in my house that are produced through fermentation include yoghurt, apple cider vinegar, and curtido. For yoghurt, the shelf-life is usually one month, which can be extended by another month through storing it in the fridge. Apple cider vinegar is viable for 2 years if unopened but decreases by a year after breaking the seal while curtido has a shelf- life of 6 months.Yoghurt contains Lactobacillus bulgaricus and Streptococcus thermophilus. Lactobacilus spp is involved in the conversion of lactose to lactic acid; hence, preventing other microorganisms from invading the yoghurt and preserving it and enhancing the shelf-life (Meybodi et al., 2019).
